El Sunzita Washed Red Bourbon is produced by Mary and Mauricio Ortiz, a kind and driven couple who've been farming their 16 hectare plot of land in the El Pasti region of El Salvador for over 30 years. Mauricio is a skilled agronomist and Mary runs the administration side of the business. Together they've built an incredibly beautiful farm on their land, which now includes a nursery specially designed to be able to strengthen weaker plants as well as a small pulper to be able to experiment with different processing methods. Mauricio focuses on utilising organic methods as much possible and swears by the three S's: soil, sun, and shade. As such, they've cleverly grown shading trees above the coffee trees and create their own fertilisers from coffee pulp. This innovative work has even earned them the Coffee Grower of the Year Award, from the agricultural minister of El Salvador!
El Sunzita is great example of how small-scale producers and roasters can work together to achieve a high quality coffee and we're delighted to have continuously worked with them since 2015. Four of the varietals grown at this relatively low elevation farm are separated and reserved exclusively for Drop Coffee, while the remaining coffees they produce go to the local mill, El Sunza, where they are blended with coffees from several other producers in the area.
This Red Bourbon varietal is one of those four and has a mature and well-balanced profile, with distinct tasting notes of Gala apple, fresh hazelnuts and red grape.
